Chocolate and nuts with a silky mouthfeel! This is my choice for an easy-going espresso, the base coffee for my strawberries and chocolate blend and also makes a very chuggable drip coffee.

Fazenda Sao Domingos
The beautiful Fazenda São Domingos was bought by Marco and Maria in 2006 and is located in close proximity to our home fazenda Pinheiro. Today, São Domingos stands as a testament to the Frozoni family's enduring legacy. It embodies a harmonious blend of tradition and innovation, dedicated to the production of exceptional coffee that has captivated the discerning palates of coffee lovers for many years.
Following the acquisition of the farm in 2006, extensive renovations have been undertaken to expand and enhance the farms cultivation of prominent coffee varietals, well-suited to the region. São Domingos’ state-of-the-art facilities are run by the farm’s manager, Ivan Cirino and Lucas Galdino Cirino, head of coffee processing, alongside their professional and committed team of farmers.
At an early age, Marco developed a close relationship with the esteemed Frozoni Family in São José do Rio Pardo. The family was known for their bakery and ownership of Fazenda São Domingos, an estate located in Mococa, just a short drive from São José do Rio Pardo. The property was predominantly involved in the supply of fresh milk to the region. However, small lots of coffee were also produced at the fazenda. As time went by and a new generation of the Frozoni family made the decision to relocate to São Paulo, Marco and Maria Silvia, who were in the process of taking over Fazenda Pinheiro, acquired the Fronzoni’s property and began to cultivate coffee on the land. The shared infrastructure capabilities made it an ideal fit and the two farms have been thriving together ever since .

One of the most exciting things about Fazenda São Domingos is the cutting-edge technology and infrastructure on the site. With its complete wet and dry milling facilities the farm can perform a wide range of processing methods. The fazenda was recently equipped with Pinhalense and Colombian Penagus drying machines. Embracing the advancements of the 21st century, temperature sensors were installed on all processing equipment in 2021 and 2022, enabling the farm to employ a highly precise drying technique. Throughout the fields, drip-irrigation systems have been installed to regulate the uniform irrigation of the trees, ensuring their consistence development. All young trees up to the age of 6 years (or a size of less than 1.5m) are harvested manually and the older trees are selectively harvested using a machine that only picks the ripe cherries. The fazenda has a total of roughly 9,000M2 of concrete drying area where the fruits lay for 10 to 15 days. Once dry, the beans are distributed amongst 8 dryers to achieve the ideal residual moisture. Finally, eight large wooden silos, with a capacity of 2,500 bags, are used to store the farms coffee beans for between 4-6 weeks before it is later moved to a warehouse for dry-milling.
As with all our fazendas, environmental activity is taken very seriously on São Domingos. Collected rain-water is used to supply the irrigation system and the fantastic bio-fuel created on fazenda Pinheiro, alongside its compost, is used for both the farms coffee and eucalyptus cultivation. In addition, the farm has 80 hectares of conservation land and is home to many native birds such as Gavioes and supports native trees such as Ipês and fragrant Quaresmeiras.
