Jairo Arcila - Strawberry Pink Bourbon
This coffee is sunshine in a cup! As soon as you grind this coffee the wonderful aroma of plump ripe strawberries fills the room! This pink bourbon was grown by Jairo Arcila on the Santa Monica farm, Colombia. The cherries were exposed to a dry anaerobic fermentation phase of 72 hours. During this fermentation phase strawberries and wine yeast were added. The cherries were then pulped and placed together with ripe strawberries to dry on raised beds until the ideal moisture content was reached.
The result is a beautiful example of what co-fermented coffees done well can taste like. The strawberry notes marry well with the quality of the varietal and result in a balanced cup. As the coffee rests the strawberry blends with the other notes which become clearer. I tasted fig, a brown sugar sweetness and lime.

This coffee works very well brewed as filter coffee. For a real strawberry fruit-bomb brew it using immersion brewers like the aeropress or pulsar brewer and for a brighter cup with more pronounced acidity, I'd recommend using a cone brewer like the orea v4 narrow or the good 'ol v60. I also love it in a flat whites where it tastes like strawberry cheesecake!
