Paola Trujillo – Sydra
This coffee has great sweetness and wonderful, clear lavender notes. I think that's why I was immediately drawn to this coffee. They remind me of the beautiful Croatian island Hvar - also known as the lavender island.
This coffee was grown by Paola Trujillo at the Patio Bonito farm in south west Colombia. The perfectly ripe coffee cherries were harvested, floated and hand sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The result is a beautiful sweet and clean example of the sidra variety.
Sidra is a hybrid between Bourbon and Typica varieties. It is sweet and bright. It is said to have originated in Ecuador.
I've been very much enjoying filter brews with of this coffee, but it can also be brewed as a light bodied, bright and fruit-forward espresso with good sweetness to back it up.
