This is a blend of two wonderful coffees – one from Colombia and one from Brazil – and the result tastes like strawberry chocolate. The strawberry element is a strawberry pink bourbon. This pink bourbon was grown by Jairo Arcila on the Santa Monica farm, Colombia. The cherries were exposed to a dry anaerobic fermentation phase of 72 hours. During this fermentation phase strawberries and wine yeast were added. The cherries were then pulped and placed together with ripe strawberries to dry on raised beds until the ideal moisture content was reached. The result is clean and full of fruit! As soon as you grind the coffee the fragrence of fresh strawberries fills the room.
The second coffee in this blend is Brazil Sao Domingos. This coffee is from the São José do Rio Pardo region of Brazil, produced at the Sao Domingos farm by Marco A. Guardabaxo. The beans are the Acaia variety and are processed using the Pulped Natural method. Tasting notes include chocolate, vanilla and brown sugar. This coffee has great body and high sweetness.
Together these coffees harmonize beautifully and create a coffee that is sweet, rich and complex with tasting notes of chocolate, strawberry, vanilla, fig, lime and more!
